Vegan fried rice
Ingredients
Rice & vegetables
350g extra-firm tofu
1 cup cooked brown rice
1 tbs garlic oil
1/2 tsp asafoetida
1 cup edamame
1 medium carrot chopped
1 cup chopped green beans/zucchini/broccoli
1 small eggplant
Sauce
4 tbs tamari
1.5 tbs tahini
4 tbs maple syrup
1.5 tbs garlic oil
1 tsp chilli flakes
2 tsp toasted sesame oil
Method
Chop eggplant into small cubes and oven roast until golden brown.
Tear tofu into small pieces and roast until golden brown.
Add garlic oil and asofatida to a wok or large frying pan and cook for a minute.
Add carrot, edamame, beans (or other vegetables) and saute for 3-4 minutes.
Combine sauce ingredients in a bowl or jar and whisk until smooth.
Add eggplant, rice and tofu to the pan and finally, mix through sauce.
