Gingernut biscuits

Ingredients

1 tbs golden syrup

2 tbs rice syrup

1 cup SR flour

1 cup buckwheat flour

3/4 cup refined coconut oil/non-diary butter

3/4 cup sugar

2 tsp ground ginger

1 tsp baking powder

1 tsp ground cinnamon

Method

  • Preheat oven to 180 degrees

  • Warm golden syrup over low heat for 2 minutes, allow to cool slightly

  • Combine flour, sugar, ginger and cinnamon

  • Rub in oil

  • Mix in baking powder and golden syrup

  • Create walnut size balls of dough, place on a cooking rack and slightly flatten

  • Bake for 10-15 minutes (10 for chewier)
