Vegan nachos

Ingredients

1 tbs olive oil

2 tsp garlic oil

1 tbs oregano

1 tsp ground cumin

2 tbs tomato paste

2 x 400 g (14 oz) can jackfruit, drained and shredded

400 ml (2 cups) vegetable stock

4 medium tomatoes chopped

1/4 cup nutritional yeast

Salt and pepper to taste

Method

  1. Heat the olive oil in a large, deep pan or Dutch oven and add the garlic oil.

  2. Add the oregano and cumin, stir to combine and continue to cook for another minute until fragrant.

  3. Stir in the tomato paste, tomatoes and cook for another minute. Add the jackfruit, vegetable stock, nutritional yeast and stir to combine. Bring the sauce to a boil, then lower the heat and simmer for 15 minutes.

  4. Add over corn chips, add guacamole, vegan sour cream and jelapenos.
