Zucchini and mint pasta

Ingredients

2-3 hands full pasta
4 small zucchini
3 tbs garlic oil
1 bunch mint
1/2 cup pine nuts
lime juice
parmesan/pecorrino

Method

Cook pasta to al dente, drain and save come cooking liquid.

Add 2 tbs oil to hot frying pan and toss in zucchini cut into ribbons. Cook on high heat until browned.

Add mint chopped and pine nuts, cook for 1 minute.

Combine pasta, cooking water and zucchini mix in pan.

Serve adding lime juice and cheese to taste.

Season.
