Grain salad
Ingredients
2 cups of cooked mixed grains (black rice, brown rice and quinoa).
2 cups of mixed seeds and nuts (pine nut, almonds, pepitas, sunflower seeds)
1/2 cup craisins
1 bunch mint
avocado/edamame beans
Dressing
1/4 cup olive oil
1/4 cup lime juice
1 tbs maple syrup
salt and pepper
Method
Roast or pan fry seed and nut mix until slightly brown.
Chop mint and avocado roughly.
Combine all salad ingredients and add whisked dressing.
