Fenchie vegetable soup
Ingredients
2 tbs garlic oil
1/4 teaspoon asafetida
1 tsp dried oregano
2 tsp fresh thyme
2 bay leaves
3 carrots sliced into rounds
2 sticks celery sliced into rounds
2 cups green beans chopped
1 tin tomatoes
1 litre stock
1 tin brown lentils
2 cups edamame beans
2 tbs dijon mustard
salt and pepper
Method
Add oil, asafetida, oregano, bay leaves and thyme to a large pot and heat.
Add carrot, celery and beans and cook until slightly softened.
Add tomatoes, stock, dijon, edamame beans and lentils.
Cook for 30-45 mins. Season and serve.
