Lentil, quinoa and sweet potato patties
Ingredients
2 cups water or veggie stock (salt-free or low sodium)
1/2 cup dried lentils, washed
1/3 cup quinoa
1 medium sweet potato
2 tbls nutritional yeast
Method
In a large pot, bring the water to a boil.
Add the lentils and quinoa. Reduce heat, and cover pot.
Simmer for 25 minutes, or until barley is tender.
Chop up sweet potato and boil until soft.
Mash potato and add to lentil mixture.
Add nooch.
