Lentil balls with spicy tomato sauce
Ingredients
Balls
2 tins brown lentils
1 medium sweet potato roasted/steamed
1 zucchini finely grated
1 cup of finely chopped almonds/pecans/walnuts
1 tbs miso
1 tbs tamari/soy sauce
1/3 cup chia seeds
3 tsp Moroccan spice mix
Rice crumbs
Sauce
1 tbs garlic oil
1 tsp oregano/basil
1tsp chilli
1/3 cup nutritional yeast
2 tbs smoked paprika
1 tin crushed tomatoes
1 tbs tomato paste
Salt/pepper
2 tbs maple syrup
Method
Mashed the roasted sweet potato
Combined with all other ingredients except rice crumbs and refrigerate for 1 hour.
Rolls into balls and coat with rice crumbs
Baked in 180C oven for 15 minutes or until brown.
For sauce, add garlic oil to a saucepan and heat.
Add herbs and chilli and cook for a minute
Add tinned tomatoes, tomato paste, maple syrup and nutritional yeast and simmer for 10 minutes.
Season with salt and pepper.
